Rabel’s idea for there first classic method is a wine that combines the verticality of the sparkling wine base vinified in steel (in a reductive environment) with the complexity of the base refined in small wood and of the perpetual cuvées with the Solera (oxidative environment) to obtain a scratchy but evolved sparkling wine.
There is no suggested combination here: for us the bubble goes well with everything.
Classic method zero dosage from grapes Nebbiolo, Barbera and Cari and 48 months on the lees.

Description
Michele, Paolo, Francesco and Marco: four passionate sommeliers in love with the art of winemaking. The project started as a joke in 2015, they started producing wine from grapes from hill of Chieri. Now they are reviving old small vineyards and producing a vino rosso (Acustico), un bianco (Soffio) e un metodo classico (Spinoso).
